It would be ideal if all of us could have an underground cellar, which we could fill with bottles of wine collected from the premium wine producing regions of the world. Howver reality is that most of us are not afforded that luxury.

However the lack of a purpose built cellar may not be as damaging as it appears. if we consider this for a moment. Firstly there are a great number of wines which are purposely manufactured for immediate enjoyment. The modern wine maker has mastered the art of softening the tannins thus creating even at an early vintage a rouned and soft wine. For those wines that do need to be kept for a while there are some fundemental rules that should be followed.

The best environment for storing your wine will be cool 10 to 17 degrees centigrade, dark and humid (but not wet) and vibration free. The bottles should lie on there side with the wine covering the base of the cork. Ideal locations in the average house will therefore be under the stairs in the base of a cuboard or indeed a spare room in which the temperature can be kept in the desired range.
